  The name of the street must have been chosen from above for the Maison Jaffelin, 2, rue du Paradis.
And this cuvée couldn't find a better place in the Caves
du Chapitre to be aged than the part of the cellar that is just under rue du Paradis. Perhaps the environment
is more favourable, or maybe that's just superstition!
   
  Mercurey is proud of its two churches that were started
in the 11th century, one of which is located in Touches, the other in Mercurey-le-Haut. This is a village that is rich in historic monuments, one can also see the remains of the Montaigu medieval fortress (located just above the parcel of the clos de Paradis), dismantled on the orders of King Henri IV because of the centralisation of the military.

A number of stations of the Cross exist inside Mercurey, one of which refers to the visit of Pope Pius VII. These stations of the cross are spread throughout the vineyards of Mercurey, which include the communes of Mercurey, Saint Martin-sous-Montaigu and Bourgneuf-Val-d'Or.
The Pope is not the only important historic person to have visited here: Napoleon also passed through in 1815.

20 days in a wooden cask with pigeages only at
the beginning of maceration..
-Transferred with the vertical presser using gravity.
   
  -Fermented entirely in casks made of French oak
45% new casks.
-Bottled before or after harvest, no collage or filtration.
   
  2600 bottles.
   
  -Intense colour.
-The nose is marked with aromas of black fruit and roasting coffee.
-Imposing to the palate with a considerable tannic structure without being astringent.
-Very mature to taste and an agreeable aftertaste.
   
  The Mercurey goes very well with grilled meats and cold cuts. After a few years it will be perfect with a cheese board.
